You will need a bbq sauce or make your own (4 tbsp ketchup, 1 tbsp Worcestershire sauce, 1 tbsp light brown sugar, 1 tbsp cider vinegar, 1 tbsp dark soy sauce, 1 tsp English mustard, 1 garlic clove, crushed - Mix all ingredients together until smooth before coating the pork belly slices)
Step 1
Preheat the oven to 160°C / 140°C Fan / Gas Mark 4. Pat the pork belly slices dry with kitchen paper and season well with salt and pepper.
Mix together the sauce ingredients and coat the pork slices evenly in a roasting tin. Cover tightly with foil and cook for around 1 hour 30 minutes, until the pork is tender.
Step 2
Remove the foil and place under a hot grill for 3–4 minutes, turning halfway through and brushing with the cooking sauce until sticky and lightly charred.
Alternatively, finish the slices on the barbecue for extra smoky flavour, basting regularly with the sauce.
